Please correct me if this isn’t the best accompaniment of bbq food! I developed this recipe to go with a bbq chicken stuffed sweet potato and boy did it hit it on the mark. My children even devoured it. I love coleslaw! Whats not to love? But, It can add up on the sugar scales. With this recipe I chose to use a combo of sweet and dill relish instead of vinegars and sugar. besides…pickles totally go with bbq food! To lower the mayo ratio (I just can’t cut it out completely, mayo is one of those things I will NEVER let go of) I substituted plain unsweetened almond milk yogurt. Score!
1/2 cup plain unsweetened almond milk yogurt
1/2 cup mayo
2 tsp sweet relish
2 tsp dill relish
1/2 tsp dijon mustard
1 huge handful of fresh parsley or cilantro
salt/pepper
3 shredded carrots
1 small head of cabbage
Completely shave the entire cabbage head and place in a bowl. shred the carrots and add them as well to the bowl. Put bowl aside as you make the magic sauce. Add all other ingredients and stir well. Incorporate the sauce with the cabbage and carrots and let sit for about 20 minutes prior to eating. Enjoy!!!
