I’m not a huge fan of sweet potatoes but I eat them because they have so many nutritive benefits. The spiciness in this paleo approved buffalo sauce and the tang of the ranch sauce was the best combination with the sweet potatoes. This was one of my most favorite meal creations in a long time. I used only one whole breast on chicken for the entire family! To bulk up the chicken I added in baked al dente cauliflower and mixed in in with the chicken and buffalo sauce. I had zero questions about this from the kids…they just ate it and enjoyed it! Score! This was a super easy meal and the second meal I’ve utilized from my baked chicken earlier in the week. The first was BBQ chicken and eggplant pizza…which was also severely delicious. Try this!
4 baked sweet potatoes
1 large cooked chicken breast
2-3 cups baked cauliflower florets
1/2 red onion
Dairy free ranch dressing
Noble Made buffalo sauce
Salt/pepper
Chop or shred your cooked chicken breast and saute in on low heat with the red onion and baked chopped up cauliflower. Mix in the buffalo sauce, salt and pepper. Cut open the sweet potatoes and place the buffalo chicken/cauliflower into them and top with dairy free ranch.
Dairy free ranch recipe:
3 tblsp mayo
2 tblsp unsweetened plain dairy free yogurt
squeeze of half lemon
1 garlic clove pasted with salt
1 tblsp fresh dill
1 tbslp fresh parsley
1/2 tsp onion powder
1/2 tsp garlic powder
salt/pepper
Mix all together and enjoy!
