Zero legumes needed for a delicious hummus! Its all about the gut health baby. While going through a gut healing protocol all legumes are a No No as they are quite inflammatory to the digestive lining. This hummus will not leave you feeling deprived or missing its alternative I promise. Have you cooked with parsnips? If not than you should! They are loaded with many nutritive benefits. This is easy, delicious and will provide your body with an abundance of benefits. This would be great paired with carrots, siete grain free chips, Simple Mills gf crackers, veggie chips and Im enjoying it with cucumber slices.
2 small parsnips
1/2 zucchini
5 small kalamata olives
1 handful of fresh parsley
1 tblsp tahini
3 large garlic cloves
1/4 white onion
1 tblsp olive oil
1/2 tsp cumin
1/2 tsp smoked paprika
1/4 cup water
juice of 1 lemon
salt/pepper
Roughly chop the parsnips and zucchini to boil. In the same pot add in two garlic cloves, and half the amount of onions. Save 1 clove and remainder onion to throw in the blender. Boil the vegetables until soft (about 10 minutes). Drain the vegetables and throw everything in the vitamix or food processor and blend until smooth. This is so yummy!
