This was truly yummy! You won’t miss the cheese on this decadent pizza! I love this pizza crust recipe. Its light but holds up! The eggplant, avocado, onion and cilantro are just a huge burst of flavor on top of the tangy and sweet Noble Made bbq sauce (which is paleo approved). Score!!!
1 cooked chicken breast
1 small baby eggplant
Noble Made BBQ Sauce
Diced red onion
Fresh cilantro
black olives
Diced pineapple (optional)
Half avocado diced
Plain unsweetened almond yogurt

Preheat oven to 450. Make the crust per the instructions and set aside until your ingredients are ready to be layered. This crust will make two medium sized pizzas. I had one very large chicken breast left over from a baked chicken that was more than enough for my two pizzas. Once your vegetables are chopped prepare the pizzas. Spread the bbq sauce on the cooked pizza crusts and then top with thinly sliced eggplant, onions, diced or shredded chicken, and black olives cook for about 10 minutes. Once done to your liking top it with the diced avocado, cilantro and squeeze a bit of lime on the pizza. Drizzle with the yogurt. So so so yummy and bursting with fresh delicious flavors!!!
