Quinoa Vegetable GF Pancakes with Dairy Free Dill Sauce!

This is beyond savory, delicious and loaded with nothing but nutrition!  NO guilt here!  Only amazingness!!!!

 

1 1/2 Cooked quinoa

Two big handfuls chopped fresh spinach

1/2 cup shredded carrots

1/4 cup diced onion

1/4 cup organic mayonaise

2 eggs

1/4 cup chopped fresh parsley and cilantro

2 finely chopped fresh garlic

salt/pepper

3/4 cup gf all purpose flour

squeeze of 1/2 lemon

avocado oil for frying

 

Sauce:

1/4 cup mayo

1 avocado

squeeze of half lemon

squeeze of 1/2 lime

salt/pepper

1/4 tsp dill

 

For the pancakes mix everything in a bowl.  Heat up the avocado oil in the fry pan and form a ball with the mixture and flatten with the spatula in the frying pan.  Place them on a paper towel and serve with the Dill sauce.  So delicious!
