Dairy Free Creamy tahini tomato Zucchini Pasta!

 

Tomatoes, tahini, garlic, yogurt oh my…..

This flavor combination is on point!  It’s middle Eastern meets Italy!!!!  This works! I paired this dreamy creamy sauce with rice noodles but would be delicious on spaghetti squash, sweet potato noodles or steamed kale.  This is delicious!

 

2 zucchini

2 small heads of broccoli

1 onion

3 garlic cloves

1/2 pint cherry tomatoes

2 tsp tahini

1/2 cup plain unsweetened dairy free yogurt

1 cup bone broth

1 tsp basil

1/2 lemon squeezed

1/2 tsp smoked paprika

salt/pepper

1 box rice noodles, spaghetti squash or zoodles

Chop and dice all vegetables, put aside.  Saute onions and garlic in oil.  Once transparent add tomatoes, bone broth, and yogurt.  Bring to a boil then reduce to a simmer.  Add in the remaining ingredients and seasonings.  Bring to a boil again and then return to a simmer and cover and cook until vegetables are soft.  Once finished mix with noodles, zoodles or squash and enjoy!  This is one of my favs🙌
