My Spin on Curry Chicken Salad

This right here was devoured in 2 point seconds.  So simple, so delicious!  I love curry chicken salad.  Most store bought versions are loaded with crap though.  I’m always looking for ways to ramp up the nutrient values!  Here I minimized the mayo content, added in some healthy nuts, raisins, non animal dairy yogurt, and paired it with some juicy beef steak tomatoes.  Yum!!!

1 large breast of baked chicken

1/4 cup slivered raw almonds

1/4 cup of raisins

1/4 cup of diced raw red onions

1 tsp dijon mustard

1/4 tsp smoked paprika

1 tsp curry

1 tblsp tahini

zest of half a lemon

1/4 tsp garlic powder or 1 crushed garlic clove pasted

2 tblsp plain unsweetened almond based yogurt

1 tsp mayo

salt/pepper

Mix everything but the chicken together in a large enough bowl first and then add the chicken!  Enjoy!!!
