Mixed sweet and white potato mash with roasted garlic, coconut cream and duck fat

This is a new staple in our house.  This was so delicious that we are still talking about it three days later!  I don’t have anymore words for you but to just try it.

 

1 whole head of garlic chopped

1 can of coconut unsweetened coconut cream

1/4 cup duck fat

salt/pepper

6 small to medium sized russet white potatoes

2 small to medium sweet potatoes

 

Boil a big pot of water and add chopped potatoes to the water with salt.  Boil and then turn heat down and cook until the potatoes are softened.  Strain and leave the potatoes in the strainer.  In the empty pot add the chopped garlic and duck fat.  Once aromatic add the coconut cream, salt and pepper.  Add the potatoes back in and mash all together. If it needs more moisture add in bone broth until desired consistency.  Yum!

  1. Duck fat, Who knew?! It was delicious! I never thought I would like something like Duck fat. I’m still warming up to the idea of bone broth in my mashed potatoes.
