Mashed Sweet Potatoes
- 4 whole baked sweet potatoes
- 1 cup unsweetened coconut milk or cream
- 3 tbsp organic butter
- salt/pepper to taste
Mashed potatoes have never been more nutritious and easier to make! Take those already baked potatoes out of your fridge and cut them in half and spoon the inside of the potatoes into a bowl (big enough for the whole mixture and microwave safe). Now add all other ingredients and cover and microwave until cooked through, mixing on occasion(2-4 minutes).
