Crunchy Baked Sweet Potato Fries


  • 2 Large raw sweet potatoes
  • 2 tbsp arrowroot or tapioca flour
  • 2 teaspoons avocado, coconut oil or olive oil
  • 2 garlic bulbs (pasted)
  • salt/pepper to taste
  • handful of chopped fresh parsley (optional)


Turn oven on 425

Peel and chop potatoes into fry sticks.  Put into a large plastic bag and toss in arrowroot or tapioca starch.  Toss and shake the bag until all the potatoes are coated.  In a separate bowl mix together garlic paste and oil and add to the bag.  Shake more to incorporate the oil mixture.  Now arrange fries on a baking pan and sprinkle with salt and pepper to taste.  These are truly magical!  My boys love them!!!
