Feel Good Chicken and Vegetable Soup

 

  • Whole pot of bone broth
  • 2 breasts of chicken (either frozen or from your pre-cooked chicken)
  • 5 Carrot sticks
  • 5 Celery sticks
  • 1 onion
  • 2 garlic bulbs
  • 1 whole handful of dried parsley
  • 1/2 squeezed fresh lemon
  • salt/pepper to taste

 

Dice and Chop all veggies.  With the pan you will cook the soup in Saute the carrots, celery, onion and garlic until translucent.  Season the veggies with salt and pepper.  Now add broth and parsley and cook on high until boiling.  Next add the chicken and lemon juice and cook covered for 30 minutes.  If using frozen chicken breasts just add the whole frozen breast to the boiling broth and cook for 30-40 minutes and then shred the meat and place back into the pot.  I serve this with fresh spinach or rice!  Hands down my favorite meal of all time!  This makes quite a bit of soup.  I usually store individual containers of this in my freezer.  When ready to eat, I run the frozen container under hot water to release the soup and cook it on medium heat on the stove.  Easy one stop meal loaded with all the nutrients you need!  I could eat this soup every meal of the day! Yum-O!!!!
