Plantain Fries With Avocado Garlic Cream Sauce

If your looking for something healthy but tastes naughty….this is it! My whole family devoured this tonight! Plantains and avocados are superfoods loaded with dense nutrients. Nothing naughty about this dish! Enjoy every bite!

4 greenish looking plantains

1/4 cup melted coconut oil

1 teaspoon garlic powder

1 teaspoon sea salt

Turn the oven on 450 degrees. Peel the plantains and cut in half. Then cut in half the other way and keep cutting them down until the pieces are to your liking.  Pour the melted coconut oil, salt, and garlic powder in a bowl and toss the plantain fries in the mixture.  Arrange them on a pan with parchment paper (not wax paper) and season with a little more salt.  Bake for about 15 minutes and then flip over and cook for another 15 minutes.

Avocado garlic cream sauce:

1 avocado

1/2 a lime juiced

3 garlic bulbs crushed

1 teaspoon unsweetened plain almond yogurt or Cashewgurt.

salt/pepper

put avocado, lime juice, and plain yogurt  in a bowl and mash it all together. Place the fresh crushed garlic on a cutting board and sprinkle with a little salt. Take your large butcher knife and with the flat back side and start mashing the garlic to make a paste. This may take a couple minutes. Once done add it to the mixture. This is over the top yummy!
