This tastes better than its alternative version….cheesy potatoe and broccoli soup! With ZERO guilt! Winning! Not missing the cheese one bit! A must try❤️
1 cup chopped white potatoes
1/2 cup chopped sweet potatoes
5 garlic bulbs
1 large carrot
3 celery stalks
1/2 a large white onion
1 large head of broccoli
3 cups of bone broth
1 can of unsweetened coconut milk/cream
1 teaspoon smoked paprika
juice of 1 lemon
1 teaspoon dried parsley
1/2 teaspoon dried thyme
salt/pepper
Roughly chop onions, carrots, celery, garlic, potatoes and broccoli. We will be blending the soup so appearance is no biggie while sauteeing the veggies. Heat up your pot and add olive oil to pan. Throw in veggies and sauté until fragrant. Add in bone broth and coconut milk, seasonings and juice of lemon. Heat to a boil and then turn down to a simmer and cook on low for about ten minutes. Blend it all up and throw some fresh parsley in for extra nutrients and flavor! Serve immediately….Enjoy!!!
