Paleo Pad Thai

This is one of those dishes I crave! I used to love pad Thai before going paleo.  This recipe doesn’t leave me wanting anything more! It’s everything😋

 

1/4 bag of linguine rice noodles

2 zoodled raw squashes

2 zoodled raw carrots

1 red onion

1 Julianned green pepper

2 bulbs chopped fresh garlic

a big handful of fresh cilantro

1 tablespoon of fresh grated ginger

2 limes

1/4 cup of unsweetened sunbutter

1/4 cup of coconut aminos

1 teaspoon apple cider vinegar

1/4 cup olive oil

1/4 cup coconut cream

2 scrambled eggs

salt/pepper

 

boil the the rice noodles al dente!  While there cooking zoodle your carrots and squash and set aside with the chopped fresh cilantro. In a bowl mix together coconut aminos, sun butter, oil, acv, lime juice, coconut aminos, coconut cream, and grated ginger.  Set aside the bowl.

saute the onion, garlic and green pepper:).  Add the sauce to the pan and mix until all incorporated and boiling.  Turn heat to a simmer and add in the rice noodles and raw squash, carrots and cilantro mix all together and turn heat off ( zoodles turn to mush quickly). Little to no cooking required of them. The heat of the sauce will soften them enough.  Serve with scrambled eggs! Delicious!!!!dd381852-4f4d-40ad-b925-144e0c9c758a
