Carrot Cake Quinoa Breakfast Bowl
- 1 cup cooked quinoa
- 1/2 cup of unsweetened coconut or almond milk
- 1 tsp pure maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie seasoning
- 1/2 cup of shredded carrot
- 1/2 tsp vanilla paste
- 1/4 cup crushed walnuts
Place milk, syrup, and seasonings in a bowl and microwave until heated, about 1-2 minutes. Once heated add quinoa and heat for another 40 seconds. Add the remaining ingredients and serve warm. This is a breakfast show stopper!
