Turkey Meatball and Spinach Soup
- 5 cups of bone broth (can be a mixture of water and broth)
- 2 cups of small meatballs
- 2 cups raw spinach
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 2 tsp dried parsley
- 3 garlic bulbs (crushed or finely chopped)
- 1 whole chopped onion
- 3 chopped carrots
- 3 chopped celery
- olive oil
- salt and pepper
Sauce the carrots, celery, onion and garlic until translucent. Next, add in broth and seasonings. Bring to a boil and then turn down to a simmer and add in meatballs and spinach. Cook another 10-15 minutes. Yum-O!!!!
