Turkey Meatball and Spinach Soup

 

  • 5 cups of bone broth (can be a mixture of water and broth)
  • 2 cups of small meatballs
  • 2 cups raw spinach
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 tsp dried parsley
  • 3 garlic bulbs (crushed or finely chopped)
  • 1 whole chopped onion
  • 3 chopped carrots
  • 3 chopped celery
  • olive oil
  • salt and pepper

 

Sauce the carrots, celery, onion and garlic until translucent.  Next, add in broth and seasonings.  Bring to a boil and then turn down to a simmer and add in meatballs and spinach.  Cook another 10-15 minutes.  Yum-O!!!!
