Tomato and Spinach Frittata
- 8 eggs
- 1/2 cup of coconut cream or milk
- 1/2 pint of cherry tomatoes
- 1-2 handfuls of fresh spinach
- salt and pepper
Pre-Heat oven 350
Super Easy and super versatile! Mix eggs ,salt, pepper and Milk well in you’r baking dish and then add the tomatoes and spinach. Feel free to unload any other veggies you have hanging around in your fridge into this frittata! I have this for lunch with a side green salad or for dinner with a side of sweet potatoes or steamed vegetables. This is a power house meal of flavor and nutrition!
