South of The Border Soup
- 6 cups of bone broth
- 1-2 cups of ground leftover taco meat
- 1 can of unsweetened coconut milk
- 2 chopped zucchini
- 1 cup of chopped kale
- 1 diced onion
- 1 chopped green pepper
- 2 celery sticks chopped
- 3 fresh crushed garlic bulbs
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp cilantro
- 1 tbsp dried parsley
- olive oil
- 1 can of crushed organic tomatoes
- salt and pepper
- 2 limes
saute all vegetables and garlic with olive oil, salt and pepper. Once translucent add in broth, tomatoes, seasonings and coconut milk. Bring to a boil. Turn down to a simmer and add in ground meat. Serve with a wedge of lime to squeeze into individual bowl. I love this soup with a scoop of cooked rice or leftover sweet potatoes! This is another family favorite!!! Voila!
