Orange Chicken
- 2 tbsp marmalade
- 1-2 cups leftover baked chicken
- 4 bulbs of crushed garlic
- 1 orange
- 1/4 cup olive oil
- 1 teaspoon ginger powder
- 1 lime
- 2 celery sticks chopped
- 1 chopped zuchini
- salt and pepper
saute the zuchini and celery with a little oil, salt, and pepper. While cooking mix marmalade, oil, the juice of one orange, juice of one lime, salt and pepper. Don’t over cook the celery! You want the celery to still have some bite to it. Chop up chicken into small cubes and add to the vegetables. Now add marmalade mixture and garlic. Simmer on medium heat until all incorporated and cooked through. I could take a bath in this sauce it’s so good!!! Enjoy!
I serve this alongside my steamed broccoli or rice:)
