Healthy Pulled Pork and Vegetable Soup
- 6-10 cups of chicken bone broth
- 1 cup of shredded pork
- 2 cups of sliced collard greens
- 1 cup of fresh spinach
- 2 bulbs of crushed fresh garlic
- 1 cup of cubed zucchini
- 1 pint of cherry tomatoes(cut in half)
- 1 chopped onion
- 1 handful of dried parsley
- 1/2 lemon
- olive oil
- salt and pepper
Saute the onion, zucchini, tomatoes, garlic and collard greens in olive oil and sprinkle with salt and pepper. Once translucent add in broth and dried parsley. Bring to a boil and add in pork, spinach and squeezed lemon and a little more salt and pepper. No words for the flavor this produces! Delicious!!!
