Plantain taco shells

Plantain Taco

 

  • 2 Ripe Plantains
  • 1/4 cup coconut oil
  • salt and pepper to taste
  • 2 tbsp water

 

Pre-Heat oven 375

Put everything in the blender and mix until smooth like pancake batter.  Line a baking sheet with parchment paper(not wax paper, wax paper cannot be heated) and grease with coconut oil.  poor a spoon full of mixture and thin it out into a pancake looking form.  Make it as thin as possible.  Sprinkle with salt and cook in oven for 12 minutes.  Flip tacos over and cook another 12 minutes.  These freeze really well so be sure to make a big batch!  I use these for sandwiches, taco night, breakfast toast and butter….so yummy!
