Garlic Dijon Broiled Salmon
- 1 large wild caught salmon filet
- 1 tsp dijon mustard
- 1 handful chopped fresh parsley
- 1 lemon
- 2 bulbs crushed garlic
- 1 slab of butter
- olive oil
- salt and pepper
Pre-Heat broiler to 550 (be sure to not cook on the top rack!)
Rub the whole fish with olive oil and salt and pepper the entire fish. Cook it skin side up for 5 minutes. Next remove from the broiler and turn salmon over so the flesh is facing up. Squeeze with lemon! In a small bowl mix together dijon and crushed garlic. Spread mixture on the fish and add a little more salt and pepper. Place back in the broiler for around 10 minutes. Keep your eye on it! Once done, serve with fresh parsley on top and a slab of butter. Watch that butter melt off this succulent and nutritious entree. This really is out of this world amazing!!!
