Coconut Lime Basmati Rice
- organic unsweetened coconut milk or cream (will give you 2 cups or liquid)
- water or bone broth
- 1 tbsp organic butter
- 1 tbsp dry parsley
- zest of one lime
- juice of one lime
- salt and pepper to taste
1 cup rice to 2 cups of liquid! I usually make rice in bulk so I have it for other meals throughout the week. 3-4 cups of rice will make it through a couple meals throughout the week for 4 people. Measure out your rice and rinse it thoroughly with cold water in a strainer. Place all your liquid and butter in pan and cook on high until boiling. Next add the rice, parsley, salt/pepper, and lime juice. Once done mix in zest and serve.
