Smokey Baked Chicken With Rice

ab23be66-2126-4fac-b4d4-6f544d11a70dOne pot meals are my jam these days!  We are renovating our kitchen and if your anything like me, eating out is a last resort.   My kitchen is only half available so creativity is in abundance.  I’m living proof you can have a healthy meal, even in the midst of a kitchen remodel🤪

If you don’t have smoked paprika in your spice cabinet, get it! It’s a meat game changer!!! This dish was over the top yum!

1 whole chicken

2 cios Jasmine rice

1 can coconut cream unsweetened

1 cup bone broth

1 cup chopped carrots

1 cup chopped celery

1 whole onion

5 large garlic bulbs

2 lemons

3 tablespoons olive oil

1 tablespoon ground thyme

1 tablespoon parsley

2 tablespoon smoked paprika

1 teaspoon onion powder

1 teaspoon garlic powder

salt/pepper

 

preheat oven to 425!  Get a baking dish out. Start with rinsing your jasmine rice in a strainer.  I always rinse my rice!!! It makes such a huge difference in the starchiness and texture.

Place rice in the baking dish.  Pour coconut cream, bone broth, juice of one lemon, thyme, parsley and oil.  Mix to combine in the rice.

Place chicken on a plate and rub oil on chicken.  Season with salt/pepper, onion, garlic and smoked paprika seasoning.  Rub it all in!  Open the chicken breast skin (but try not to puncture the skin beyond the opening) and rub underneath the skin.  Cut up the other lemon and garlic bulbs and place in the chickens cavity.  Place chicken on top of rice and arrange the vegetable around the chicken and in rice.   Bake for about 45-60 minutes.

Let sit at room temp for about 5-10 minutes before carving chicken.   This is a huge treat! 😊
