Coco-nutty Paleo Minestrone soup

I LOVE Italian food! Being gluten and dairy free really puts a damper on big Italian feasts;)  I do enjoy finding great replacements to my old favs though! One of my all time favorite meals is soup. I could eat soup for breakfast, lunch and dinner. My freezer is loaded with all different kinds of homemade soups packaged individually so I always have one on hand. Soup, in my opinion, is the perfect meal! If you make it right that is;)  little to no sugar, loaded with veggies and clean proteins, packed with gut healing bone broth and sometimes coconut milk.  This soup here is loaded with goodness!!! Flavor and nutrients! You must try this!

2 cups bone broth

2 cups water

2 Chicken breasts

1/2 onion

5 carrots

4 celery stocks

2 zucchini

1/4 head of cabbage

3 garlic bulbs

1 can whole tomatoes

1 can of coconut milk/cream

1 teaspoon basil

1 teaspoon oregano

1 teaspoon thyme

juice of 1 lemon

1/2 teaspoon apple cider vinegar

salt/pepper to taste

 

dice and sauté the onion, celery, carrots, zucchini, and garlic in olive oil.  Then add in remainder of ingredients except chicken breasts. Bring to a boil and then add chicken. Cook until fully cooked through(about 30 min for smaller breasts). Remove chicken from pot and shred it with two forks. Add back into soup and cook for another 5 min. Enjoy!!!
