Gluten and Dairy Free Beef Stroganoff

IMG_8587Paleo Beef Stroganoff

 

  • 1 lb ground organic grass fed beef
  • 1 whole spaghetti squash
  • 1/2 zucchini
  • 1/2 summer squash
  • 1/2 bag of frozen peas/carrots
  • 2 cans of unsweetened organic coconut milk
  • 1 teaspoon worschteshire sauce
  • 1 tblsp of whole organic butter(olive oil or ghee)
  • 1/2 cup of bone broth
  • 1 tsp of potatoe starch(or tapioca)
  • salt/pepper
  • 4 garlic bulbs chopped
  • 1 tsp onion powder
  • 1 tap garlic powder
  • 1 tblsp dried parsley flakes

 

Cut your spaghetti squash in half and turn it flesh side down in a glass baking pan. Fill pan half water with water and microwave for 5-10 min.  While squash is cooking brown your meat with salt, pepper, onion and garlic powder.  Once cooked put aside.  Now take cubed zucchini and summer squash and chopped garlic and sauté until translucent.  Season with salt and pepper and dried parsley.  Once cooked add in the stock, potato starch, worsteshire sauce, butter and coconut cream(only the thick white portion in the can.  Save the liquid for your morning smoothie!)stir until thick and add the meat back in.  If it gets too thick add in more broth or coconut cream.  Now add frozen peas and carrots.  These cook fast so be sure to add them in last:) Once the spaghetti squash is done take a fork and fork the flesh out.  Place in plate and top with stroganoff! This is a decadent paleo treat that will not disappoint your taste buds!!!
