BBQ Chopped Salad

- 1 cup pre-cooked Pulled Pork
- 1 head of chopped Romaine
- 1 cup of raw spinach
- 1/2 cup of cooked quinoa or rice
- 1/2 pint of cherry tomatoes
- 2 hard boiled eggs
- 1 small diced red onion
- 1/2 cup of Queen of the Green Coleslaw
- 1 whole sliced avocado
- 1/4 cup of all natural organic ketchup
- 1 tsp raw honey
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1 tsp of stone ground mustard
- salt and pepper
Mix the ketchup, honey, apple cider vinegar, mustard and salt and pepper in a small bowl. Place the Pulled pork in a saute pan and add in ketchup mixture. Heat through. Now build a beautiful chopped salad! Mix the chopped romaine with the spinach and top with Quinoa or rice, tomatoes, onions, hard boiled eggs, coleslaw and sliced avocado. Squeeze the lime on the finished salad for a yummy citrus flair!
Raw Ranch Dressing:
- 1 cup of Coconut cream
- 1 egg yolk
- 1 tsp dill
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp parsley
- 1 tbsp apple cider vinegar
- salt and pepper
Blend all together! Add more coconut cream to thin it out to your liking:) This couldn’t be any more delicious and easy!!!
