Pumpkin Harvest Soup
- 2 cans of unsweetened organic pumpkin puree
- 1 can of unsweetened organic coconut milk
- 1 tsp fresh grated ginger
- 1 lime
- 1 cup bone broth
- 1 onion
- 1 carrot
- 1 celery
- 1 grated apple
- 2 garlic bulbs
- 1 tbsp dried parsley
- coconut oil
- salt and pepper
Add Chopped carrots, celery, onion, and garlic to the pot with coconut oil. Cook until translucent then add everything else. Once boiled turn heat down to a simmer and cook covered for 20 minutes. After 20 minutes take and immersion blender or blend using a regular blender. Easiest most delicious soup ever! Will have you loving this harvest season!!!
