Gluten Free Spaghetti and Meatballs
- 6 Turkey Funfetti Meatballs (entree section)
- 1 spaghetti squash
- 1 white onion
- 1 jar or can of crushed tomatoes
- 1 jar or can of whole tomatoes
- dried parsley
- dried basil
- dried oregano
- 2 bulbs fresh garlic
- olive oil
- salt and pepper
Cut the spaghetti squash in half length wise. Place it in a baking dish flesh side down and fill the dish half way with water. Bake in the oven for 40 min on 375. While thats cooking prepare the sauce! Finely chop the onion and garlic and place it in the pan with olive oil and cook until translucent. Now add the crushed tomatoes. Take the whole tomatoes and place in a bowl to crush them in your hand. Now add those to the pot. Next, add all the seasonings, salt and pepper. Once all incorporated place the already cooked meatball’s in the sauce. Cook covered for 20-30 minutes. Once Squash is done, take a fork and scrape the flesh out of skin. It should resemble spaghetti! Place it in the serving bowl and cover it in the sauce and meatballs. So so so delicious!
