  • 1 Whole organic raw chicken
  • olive oil
  • salt and pepper

Pre-Heat oven 425

Yes folks, that’s it!  I keep my chicken super simple because I use the meat and bones in many different ways throughout the week.  I never just make one!  Try to get used to cooking in bulk for efficiency throughout the week.  We can turn this one chicken into many amazing different dishes!  Depending on the size of your family and how many meals you plan on utilizing the meat with gage how many to cook from that.

Take out the giblets and put into baggie or container for future use.  Clean the bird with cold water and place in baking dish.  I rub oil all over exterior of bird and sprinkle generously with salt and pepper.  Cook uncovered for about 1 hour and 15 minutes or until internal temperature of the bird is 165.    Once done let it rest on the counter for 30 minutes before cutting into it.
